Spanish eggs for breakfast!


Since watching Jules make this on Masterchef I wanted to have a go myself.  Found a few recipes online just to give me a rough idea of what’s involved and then made it up as I went.

Ingredients:

  • 1 chorizo sausage, thinly sliced
  • 1 can diced tomato
  • 1/2 red onion, finely diced
  • 2 baby potatoes, finely diced
  • 2 teaspoons capers
  • 1 teaspoon crushed garlic
  • tiny pinch chili
  • tiny pinch garlic salt
  • 1 teaspoon sugar
  • 3 eggs
  • crusty bread to serve (sourdoug would be great)

Makes 3

Total time 30 mins

Other things you could do which I didn’t:

  • use olives (if you put olives, I wouldn’t put in capers)
  • red wine vinegar
  • you could substitute red onion with brown onion
  • you could exclude the potato

Method:

  1. Preheat oven to 180oc
  2. Brown the potatoes with olive oil for 5 mins, put aside

  3. Brown chorizo and red onion

  4. Add garlic and chili
  5. Add potato back into the frypan
  6. Pour can of tomato in and stir
  7. Add capers, salt and sugar (I add sugar whenever I cook with tomatoes to draw some sour acidity out of it) and cook for a few minutes

  8. Spoon the mixture evenly into 3 ovenproof dishes, making a little well in the middle
  9. Crack an egg into each well and sprinkle some salt onto the top

    All ready to go into the oven

  10. Cover with foil (I used the lid of the mini casserole dish) and place in oven for 7-10 mins until egg white is no longer transparent
  11. While that’s baking, slice up some bread (I got a stick of parmesan bread) and put that in the oven as well
  12. …and voila!

Yummy Saturday breakfast

Excuse the half-finished cup of coffee, my boyfriend made it for me when I was halfway through cooking the eggs as he was an eager beaver to try out his new coffee machine.  And how cute are the red mini casserole dishes?  $3 from Kmart.  Thanks Kmart!
