Earl Grey cupcakes with Lemon cream cheese frosting


I’ve been blogging for a few weeks now under the name ‘cupKaykes’ so thought it was finally time I showed you some cupcakes and shared my recipes!

Today I made Earl Grey cupcakes with a Lemon cream cheese frosting. Like with all things I cook, I scoured the net for a few recipes to give me a rough idea and then changed it slightly for my own personal taste, so this is my take.

Ingredients for earl grey cupcakes

Ingredients for batter:

  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups self raising flour (you can substitute self raising flour with normal flour plus baking powder)
  • 1/2 cup milk
  • 2 teaspoons earl grey tea leaves (you could use a teabag if you wanted but I find there’s more flavour in tea leaves)

Makes 12

Method:

  1. I put the tea leaves in the milk and placed it in the microwave for a few minutes.  I left this to infuse for as long as possible while I got started on everything else.  I know some other recipes put the tea leaves straight into the batter mixture but if I strain tea leaves out of my tea before drinking, why would I put tea leaves into a cupcake I’m going to eat?  Each to their own…

  2. Preheat oven to 170oC and fill muffin tray with 12 patty pans
  3. Cream butter and sugar til light and fluffy
  4. Add eggs one at a time
  5. Add half the amount of flour, half milk, second half flour and second half milk
  6. Spoon the mixture evenly into the 12 pans (approx half to 2/3 full but no more – you don’t want it to rise past the top of the patty pan)

    Note: this is TOO full. I had spillage over the top and it was NOT pretty. Ideally you want to have 1/3 less mixture

  7. Stick it in the oven for 20-25 minutes
  8. Cool on wire rack

Ingredients for frosting:

  • 1 packet (250g) cream cheese
  • 1/2 cup softened butter
  • 1 cup pure icing sugar
  • splash of vanilla essence
  • rind of 1 lemon
  • juice of 1/2 lemon (I personally put the juice of a whole lemon in but that’s probably too sour for most people)
  1. Beat cream cheese and butter together
  2. Slowly pour in icing sugar until incorporated
  3. Add vanilla, lemon rind and lemon juice
  4. Pour into a piping bag and pipe away

I also ripped the tags off some earl grey teabags and placed them in the centre of the frosting for presentation.  I also used green and yellow cupcake pans because the Olympics is on at the moment!
