Red Velvet Cupcakes with Cream Cheese Frosting


These cupcakes are my absolute favourite cupcakes of all time – to me they’re somehow lighter and less sickly sweet than a lot of other cupcakes.  I also love cream cheese frosting and I adore the pretty red colour.  I’ve spent 2 years perfecting this recipe and now I think I have it just right.

Ingredients for red velvet cupcakes

Stuff you need for the batter:

  • 2 cups sugar
  • 230g butter
  • 2 eggs
  • 2 tbsp cocoa powder
  • 2 tbsp red food colouring (I have also used pink food colouring with no problem – turned out almost identical to red colouring)
  • 2.5 cups flour
  • 1 tsp salt
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 tbsp white vinegar

Makes 12

Method:

  1. Preheat oven to 175oC and fill muffin tray with 12 patty pans
  2. Cream butter and sugar together, adding eggs one at a time
  3. Mix cocoa and red food colouring in a small bowl, add to butter sugar mixture
  4. Mix flour and salt in a separate bowl
  5. Add half the amount of flour, half of buttermilk, second half flour and second half buttermilk
  6. Add vanilla extract
  7. Mix baking powder and vinegar in a small bowl, add to mixture
  8. Spoon the mixture evenly into the 12 pans
  9. Stick it in the oven for about 20 mins (do the toothpick test)
  10. Cool on wire rack – don’t worry if you pull the cupcakes out of the muffin tray and the centre feels too soft and not quite set.  It will end up perfect, trust me

Stuff you need for frosting:

  • 1 packet 250g cream cheese – use full fat, NOT the light stuff as it doesn’t hold as well
  • 50g butter
  • 1 cup icing sugar, sifted
  • 1 tsp vanilla extract
  • tiny splash lemon juice (optional – if it suits your taste)
  1. Cream the butter and cream cheese together
  2. Slowly add in sifted icing sugar
  3. Add vanilla extract/lemon juice
  4. Pour into a piping bag and pipe away

For decoration I crumbed part of a cupcake and sprinkled the crumbs on top of the cupcakes.
