Ok so I know it’s not quite summer yet but the last few days in Sydney have certainly been a few degrees warmer than it should be for the middle of winter. The warmer weather has inspired me to get back into making salads for lunch and dinner. I have 2 main ones which I rotate through:
- Walnut, feta, proscuitto and pear salad
Ingredients: spinach and/or rocket, pear, proscuitto, danish feta (the really soft stuff), cucumber, crushed walnuts.
Dressing: extra virgin olive oil, lemon juice, salt, sugar - Haloumi, tuna and four bean salad
Ingredients: spinach, red capsicum, can of four bean, red onion, grilled haloumi, can of tuna.
Dressing: extra virgin olive oil, balsamic vinegar, salt, sugar
