I had a rare Sunday that wasn’t chock full of appointments so I took the opportunity to sleep in til 10am (I also woke up with a swollen throat at 9am and decided sleeping was a better option then getting up). My boy made me a great coffee with the Sunbeam coffee machine I bought him for his birthday and we did a few boring chores before heading to a family friend’s house for a casual lunch.
The boy wanted to get home to watch the Swans game so I went to the masseuse and fell asleep on the massage table. For serious. It was amazing.
I had some leftover sour cream in the fridge from nachos earlier in the week so I decided to make pumpkin soup (easy on the throat as well). The closest supermarket to my masseuse was Franklins which I had not been into in a decade and was disappointed by the lack of fresh produce (lack is not the right word – absence is better). I felt bad walking out empty handed so I grabbed a block of Whittaker’s Fruit and Nut chocolate.
Luckily there was a Coles round the corner so I grabbed a quarter of a kent pumpkin (800g), 2 small potatoes, 1 brown onion and chicken stock cubes. Dice all the veggies and chuck it in a pot with 3 cups of water and 3 cubes of stock. I added 2 teaspoons of sugar and 1 teaspoon of salt and simmered for about 15 minutes. Take it off the heat and use a handheld mixer to whizz the soup for a few seconds and you’re done. So easy. Serve with sour cream and cracked pepper.
I had bought 2 punnets of strawberries at Coles so had some fresh strawberries with a brown sugar lemon syrup for dessert. Again super easy and super quick (place 1/2 cup brown sugar and 1 cup water over medium heat until reduced with a few squeezes of lemon).
Back to work tomorrow….. Can you sense my excitement?
