Green tea cupcakes

Since it’s Fathers Day tomorrow and my Dad wouldn’t let me cook him dinner I decided to bake some cupcakes.  My Dad’s not generally a sweets fan so I decided to make cupcakes that weren’t overly sweet and these fit the bill.

What you’ll need for the batter:

  • 1 cup flour
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 85g softened butter
  • 3/4 cup sugar
  • 1 egg
  • 1/3 cup milk
  • 1 tbsp matcha green tea powder (I sourced it from an asian grocery)

Makes 12


  1. Preheat oven to 175oC and fill muffin tray with 12 patty pans
  2. Mix flour, salt and baking powder in one bowl
  3. Mix milk and matcha green tea powder in another bowl
  4. Cream butter and sugar until light and fluffy (about 5 mins)
  5. Add egg and continue beating
  6. Add half the flour mixture then half milk mixture, second half flour mixture and second half milk mixture
  7. Spoon the mixture evenly into the 12 pans
  8. Stick it in the oven for about 20 mins (do the toothpick test)
  9. Cool on wire rack

You can make a simple green tea buttercream by adding 2 tbsp matcha green tea powder to your normal buttercream recipe but I thought I’d try the cooked flour frosting (also known as magical frosting or ‘the best frosting ever’) since it’s less sweet than buttercream or cream cheese frosting.  Cooked flour frosting instructions here.
